With every meal, I like to include a side dish of salad. More often than not, I always include carrots in the salad. The carrots can be shredded or cut into little pieces, so that they are easier to eat with your main meal.

Carrots contain many nutrients that help to improve your health. Some of these include beta-carotene(Vitamin A), and anti-oxidants(cancer fighters).

Here is a carrot salad recipe you can use to create a quick salad, healthy snack or as a dessert. Take one full cup of shredded carrots, mix with half a cup of slivered almonds and another half a cup of raisins. Then drop the mixture and stir into a cup of plain yogurt, helping to create a delicious side dish, to your main meal.

These days of increasing food prices, many people are taking the option of maintaining a fruit and vegetable garden. With your own garden, you can grow herbs, vegetables and fruit, allowing you to pick fresh produce from your garden and cook on the same day.

Your meals and salads would taste so much better, when you can taste all the natural flavours of freshly picked garden produce. Once you start to include freshly picked garden produce in your salads and cooked meals, you will never want to go back to buying the tasteless produce you buy from the food store.

If you do not have enough room for a garden in your yard, you can grow a few plants in containers around your home. You can even have a herb garden in a metal box just outside your kitchen window. That is where I grow my delicious herbs! Every time I need some fresh herbs, I just open the window and voila! Freshly picked herbs for cooking!

If you have received medical advice to eat more foods high in vitamin K, then you need to eat more leafy greens like spinach, kale, cauliflower, cabbage and broccoli. If you include these as part of your regular meals, then you should be able to meet your daily requirements.

You can discuss with your dietitian, a diet plan with foods high in Vitamin K to discover what portions of your meals should include these leafy greens.

You can grow some of these leafy greens in your own garden, or buy them from your local food store or a health food store. Buying from a grocery story does not grantee genuine freshness from the day they are picked. Once they are picked they may have to be refrigerated and then transported to the store. It may be days or weeks before the food reaches your store.

If you grow your own leafy greens, you can include them in your meal on the day they are picked, ensuring a delicious meal with tender fresh vegetables.
